Pesto Pizza @ Tempt my Tummy

If any of you are following my twitter, you may have seen that Paul ate 16 pieces of pizza the other night at Mega Pizza in Brazil.  Its an all you can eat pizza place, and to be honest, the pieces are small and the crust is thin. . . but still. . . .


Our family is competitive and I mentioned to him that a friend had eaten 13 pieces, I guess he had to out do him.  Here he is, starting his pizza eating,

The little blue things he is holding are mayonaise packages.  Yes, on a pizza table.  But this is Brazil.  He used them to keep track of how many pieces he ate.


In honor of Paul, I am posting my favorite pizza recipe.  

Pesto Pizza
Homemade pizza crust, your favorite recipe or use frozen bread dough if you are lucky enough to have that where you live.  (or ask and I will post my recipe)

1 cup or more of pesto sauce (or I can post mine)

1 cup heavy cream

Toppings
Mozzarella cheese
Thin slices of red and green peppers
Green olives if you like them

This is for 2 pizzas.

Stretch the bread dough out on to a round pizza pan.  Pre cook 10 minutes.  When you take it out of the oven, pour 1/2-3/4 cup heavy cream on each pizza.  Add half the pesto sauce to each pizza and kind of mix it together and spread in around.  Put the toppings on, I like my toppings on top of the cheese, not under.

Cook in a very hot oven another 20 minutes or so and be prepared for a delicious, gourmet pizza!

With three boys ages 17, 15, and 12 I just have to laugh. We've had occasions like that. Recently mine have been into putting Catalina salad dressing on their pizza! The pesto idea sounds great.

Probably Paul can get away with eating a few extra pieces of pizza; growing guy that he looks like he is. But most would be waddling out of the place, as I imagine some do. Is pizza popular in Paraguay?

Yes, we do eat lots of pizza in Paraguay. I wonder if there exists a place on the planet where they do NOT eat pizza.

And skinny Paul hardly ate for 2 days after his bing. He is skinny because he only eats when he really wants to. Gotta admire that!

I returned from Paraguay last August after 9 months. I was just wondering if you have eaten at La Vienessa. It was one of my favorite restaurants in Asuncion. If so, have you tried the chicken taco? Yum! Is there such thing as discovering the recipe for that?
